MEATBALL CASSEROLE 
1/2 lb. ground meat
1/2 c. cracker crumbs
1 egg
1/4 c. chopped onion
1/2 tsp. salt
Oil
2 c. cooked rice
Dash of pepper
1 (8 oz.) jar cheese spread
1 (10 oz.) pkg. frozen chopped broccoli, thawed & drained
1 c. chopped tomato
1/4 tsp. basil
1 tbsp. melted butter

Combine meat, 1/4 cup cracker crumbs, egg, onion, salt and mix. Form 12 balls and brown in oil. Combine rice and pepper; place in bottom of casserole. (Cook rice ahead of time). Cover with meatballs.

Combine cheese, broccoli, tomato and basil. Pour on top with remaining cracker crumbs tossed with butter. Bake at 350 degrees for 30 minutes. 4-6 servings.
