BUTTERMILK PIE 
1/2 c. butter
1/3 c. sugar
3 egg yolks
3 tbsp. flour
1 1/2 c. buttermilk
1 tbsp. grated lemon rind
1 tbsp. vanilla
1/2 tsp. nutmeg
1/8 tsp. salt
3 egg whites, beaten to form stiff peaks
2/3 c. coconut
1 (9 in.) pie crust

Cream together, butter and sugar. Add yolks, beating after each one. Beat in flour, buttermilk, lemon rind, vanilla, nutmeg and salt. Fold in beaten egg whites and coconut. Pour into unbaked pie shell and bake at 325 degrees for 45 to 55 minutes.
