PISTACHIO FRUIT SALAD 
1 pkg. (3 3/4 oz.) pistachio pudding mix, instant
1 can (20 oz.) crushed pineapple (do not drain)
1 lg. container (9 oz.) frozen whipped topping, thawed
1 can (11 oz.) mandarin oranges, drained
1 c. miniature marshmallows
1/2 c. chopped walnuts
1 c. sliced strawberries, cantaloupe cubes, grapes, blueberries or cherries, all optional

Put dry pudding mix into large bowl. Stir in pineapple with its juice, the thawed topping, drained oranges, marshmallows, bananas and any other fruit you wish. Cover and chill. Makes about 7 cups or 8 to 10 servings. This can be frozen if you omit the banana, cantaloupe, or blueberries. The banana darkens during freezing and the melon and blueberries get watery. It also keeps well in the refrigerator.
