POTATO AND SAUSAGE SOUP 
1 1/2 lbs. mild Italian sausage
1 tbsp. butter
1/2 c. chopped onion
1/2 c. chopped celery
3 c. chicken broth
1 c. water
1 c. milk
4 med. white potatoes, peeled and diced
1 1/2 c. Cheddar cheese, grated
Salt and pepper to taste

In a large saucepan, brown sausage, chop into small pieces. Drain off fat. Remove sausage from pan. Set aside. Melt butter in saucepan. Add onion and celery, saute but do not brown.

Add broth, water and potatoes. Bring to a boil, reduce heat and simmer, covered, for about 40 minutes or until potatoes are tender. Drain. Mash about 1/2 the potatoes in the pan. Leave the remaining in c hunks. Add sausage and stir until heated through.

Just before serving, add cold milk, stirring constantly. Add cheese and stir until melted. Season with salt and pepper.
