LEMON ORANGE PUDDING 
4 tbsp. butter
2 or 3 c. sugar
8 egg yolks
1 c. sifted flour
1 tsp. salt
2/3 c. lemon juice
1 c. orange juice
3 lemon rinds, grated
3 orange rinds, grated
4 c. scalded milk
8 egg whites

Cream together the butter, sugar and egg yolks. Add sifted flour, salt, juice and rind of lemons and oranges and the scalded milk. Pour stiffly beaten egg whites into the mixture.

Place in #165 pan; set in a larger pan of water. Bake as for custard at 325 degrees approximately 1 hour.
