1 (10 oz.) pkg. frozen chopped spinach
2 eggs, beaten
1 c. herb seasoned stuffing mix
1/4 c. grated Parmesan cheese
1/4 c. sm. curd cottage cheese
3 tbsp. milk
1/8 tsp. pepper

Remove wrapper from spinach box; place box in a flat baking dish and pierce with a fork. Microwave at high for 7-11 minutes or until done.

Combine remaining ingredients; add spinach and mix well. Spoon mixture into a 1 quart casserole; cover with heavy duty plastic wrap. Microwave at high for 3-4 minutes or until casserole is almost set, turning dish once. Let stand 1 minute. If not set, continue microwaving briefly. Yield 4 servings.
