CHOCOLATE CAKE 
3/4 c. flour, sifted
1/4 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
3 tbsp. cocoa
1/4 c. cold coffee
1 egg
Non-nutritive sweetener equal to 1/2 c. sugar
1/4 c. water
1 tbsp. oil
1 tsp. vanilla

Preheat oven to 350 degrees. Line an 8 inch round layer cake pan with paper; grease lightly with butter. Sift flour, salt, baking powder, and baking soda together; blend in cocoa and coffee. Beat egg, sweetener, water, oil and vanilla. Stir into dry ingredients; mix until smooth. Pour batter into pan, cover with foil, and place in shallow pan of water. Bake about 30 minutes. Remove from pan; cool on cake rack. Cut, crosswise, fill, and frost with desired frosting. Yields 8 servings. 76 calories per serving (not including frosting).
