PICKLED BEETS 
3 qts. cooked beets
1 tbsp. broken stick cinnamon
1 tbsp. mustard seed
2 c. sugar
1/2 tsp. whole cloves
1 pt. vinegar
1 pt. liquid in which beets were cooked
2 tsp. salt

Slice cooked, skinned beets or leave whole if small. Tie spices in a bag and plunge into mixed sugar, vinegar, beet liquid and salt and boil 10 minutes. Add beets and simmer gently 15 minutes. Remove spices. Pour beets and liquid into hot sterilized jars and seal.
