CHOCOLATE TOFFEE BARS | |
1/4 c. packed brown sugar 3 tbsp. butter 1/2 c. flour 1/4 tsp. baking powder Mix brown sugar and butter; stir in flour and baking powder until crumbly. Press firmly and evenly in 8x8x2 inch microwave dish. Place dish on inverted microwavable dinner plate in microwave oven. Microwave, uncovered, on medium (50%) power 4 to 6 minutes, (rotating dish 1/4 turn after 2 minutes) until mixture appears almost dry. Let stand 5 minutes. Remove dinner plate from oven. 1 egg, beaten 1/2 c. packed brown sugar 1 tbsp. flour 1/4 tsp. baking powder 1/2 tsp. vanilla 1/4 tsp. salt 1/2 c. semi-sweet chocolate chips 1/2 c. chopped nuts Mix egg, brown sugar, flour, baking powder, vanilla and salt. Stir in chips and nuts. Spread over cooked layer. Microwave (do not elevate) uncovered on medium (50%) power 7 to 10 minutes, rotating dish every 3 minutes until top begins to lose glossiness (DO NOT OVERCOOK). Cover loosely and let stand 5 minutes. Uncover, cool completely. Drizzle with chocolate glaze. Refrigerate 30 minutes, cut into squares. CHOCOLATE GLAZE: Microwave 1 tablespoon cocoa, 1 tablespoon butter and 1 tablespoon water in a 2 cup microwavable measure uncovered on high 20 to 30 seconds or until butter is melted. Mix in 1/2 cup confectioners' sugar until smooth. When you pour over cooled pan, dip spatula into hot coffee (black) to ease spreading. I double the glaze part - it comes out more like fudge! |
