MASHED POTATO CASSEROLE 
3-4 large potatoes (or more)
1/3 c sour cream
1 tsp salt
dash pepper
1/2 tsp sugar
1/4 c butter
milk
1/8 tsp chopped chives
1/2 c cooked spinach, drained well
1/2 c grated cheddar cheese

Cook and mash potatoes. Add salt, pepper, sugar, sour cream and butter. Add just enough milk to bring to proper consistency. Add remaining ingredients (except cheese). Place in greased casserole and top with grated cheese.

Bake 20 min. at 400°F or microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
