MASHED POTATO CASSEROLE 
12 - 14 potatoes, peeled, cut - up and cooked
1/4 c. butter
1/2 c. sour cream
8 oz. cream cheese
2 eggs
1/2 c. milk
1/4 c. chopped onion
1 tsp. salt
Dash potatoes

Mix together butter, sour cream, cream cheese, eggs, milk, chopped onions, salt and pepper. Beat thoroughly into mashed potatoes. Pour into buttered 2 1/2 quart casserole dish. Bake at 350 degrees (1 hour) until light brown. Can be made a day ahead before baking.
