1 pkg. (10 oz.) Birds Eye green peas 1/2 tsp. salt 1 1/2 c. water 1 1/3 c. (4 5/8 oz. box) Minute Rice 3/4 c. mayonnaise 1/2 c. chopped dill pickle 1 tbsp. grated onion Dash of pepper 1 c. cooked ham strips 1 c. Swiss cheese strips Add frozen peas and salt to water in saucepan. Bring quickly to a boil and boil 2 minutes. Then add Minute Rice. Mix just to moisten all rice, cover and remove from heat. Let stand 5 minutes. Then stir in mayonnaise, pickle, onion and pepper. Mix lightly with fork. Chill. Before serving, add ham and cheese, mixing lightly. Serve on a crisp salad green. Garnish with tomato wedges if desired. |
