SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
2 lightly beaten eggs
1/3 c. melted butter
1 tsp. vanilla
1/2 c. sugar
1/2 tsp. salt
1/2 c. milk
1 tsp. cinnamon

Mix all together and pour into greased baking dish (2 quart). Cover with topping (recipe follows). Bake at 400 degrees for 35 minutes.

TOPPING:

1/3 c. butter
1 c. brown sugar
1/3 c. self - rising flour
1 c. chopped pecans
1/2 tsp. cinnamon
1 c. coconut (optional)

Melt butter. Add other ingredients. Sprinkle over sweet potatoes.
