2 1/2 to 3 lb. broiler-fryer chicken 2 tbsp. butter 2 tbsp. olive or vegetable oil 1/4 c. finely chopped onion 1/4 c. lemon juice 2 tbsp. Worcestershire sauce 1/2 tsp. dried basil leaves 1/4 tsp. dried marjoram leaves 1/4 tsp. dried oregano leaves 2 lg. cloves, garlic, finely chopped Cut chicken into pieces; cut each breast half into halves and remove skin. Heat butter and oil in rectangular 9x13x2 inch baking pan in 375 degree oven until butter is melted. Stir in remaining ingredients except chicken. Place chicken meaty sides down in pan, turning to coat with herb mixture. Bake uncovered 30 minutes. Turn chicken; bake until thickest pieces are done, about 30 minutes longer. 7 servings; 200 calories. |
