SASSY MUSHROOM BURGERS 
3 c. sm. whole fresh mushrooms
1/2 c. bread crumbs
2 eggs, slightly beaten
1/4 c. chopped green onion
1/4 c. diced walnuts
3 tbsp. flour
1 tsp. salt
1/2 tsp. thyme
Oil for frying

Finely chop mushrooms to make about 3 cups. Combine chopped mushrooms with bread crumbs, eggs, onion, walnuts, flour, salt and thyme. With lightly oiled hands, form mushroom mixture into 4 patties. Fry patties in 1-inch hot oil until browned. Turn gently and brown other side. Drain on absorbent towels. Makes 4 patties.
