TEXAS BEEF SKILLET | |
1 lb. ground beef 3/4 c. chopped onion 1 (16 oz.) can tomatoes, cut up 1 (15 oz.) can red kidney beans 3/4 c. quick cooking rice 3/4 c. water 3 tbsp. chopped green pepper 1 1/2 tsp. chili powder 1/2 tsp. salt 1/2 tsp. garlic salt 3/4 c. shredded American cheese (3 oz.) Corn chips, crushed In skillet, cook ground beef and onion over medium heat until meat is browned and onion is tender (350 degrees on electric skillet). Stir in tomatoes, kidney beans, quick cooking rice, water, green pepper, chili powder, salt and garlic salt. Cover and reduce heat, 220 degrees. Simmer, stirring occasionally, 20 minutes. Top with shredded cheese. Cover and heat about 3 minutes or until cheese melts. Sprinkle crushed corn chips around edge. Serves 6. |
