ZUCCHINI - TOMATO SALAD 
3 med. zucchini (about 1 lb.)
2 or 3 tomatoes
1 c. chick peas (garbanzos)

DRESSING:

3 tbsp. lemon juice
1 tsp. salt
1/3 c. chopped parsley
1 tsp. basil
1/2 c. olive oil
1 tsp. honey

Cut zucchini into 2 inch strips. Slice tomatoes. Place tomatoes, zucchini, and chick peas in bowl. Combine remaining ingredients and pour over vegetables. Chill about 2 hours, covered. Stir occasionally. Remove vegetables from dressing to serve.
