SWEET-SOUR PORK 
1 1/2 lb. boneless pork
corn oil
salt and pepper
1/2 c. barbecue sauce
1/2 c. pineapple juice
1/4 c. vinegar
1 tbsp. cornstarch
20 oz. can pineapple chunks, drained
1 green pepper, cut into strips
cooked rice

Cut pork into 1 1/2-inch cubes and brown in a small amount of corn oil. Season with salt and pepper. Stir in mixture of barbecue sauce, pineapple juice, vinegar and cornstarch. Cover and simmer for 35 minutes. Add pineapple and green pepper and simmer for an additional 10 minutes. Serve with hot rice.

Serves 6.
