PICKLED WATERMELON RIND | |
Rind of 1 watermelon 1 oz. alum 4 qt. water 1 qt. vinegar 3 lb. brown sugar 1 stick cinnamon 1 tsp. cloves Pare and cut into thick slices the rind of 1 watermelon. Boil alum and water together, pour over melon rind in large saucepan and let stand in a warm place half a day (such as the back of the stovetop). Remove from alum water and put into cold water. Let stand until cool. Boil vinegar and brown sugar. Add cinnamon and cloves. Then add watermelon and simmer until rind is the consistency to eat. Put in canning jars. |
