FLORENCE'S PICKLED WATERMELON RINDS | |
Mason (kilner) jars 8 c. firm watermelon rinds 2 1/2 c. cider vinegar 1 c. water 4 c. sugar 2 tbsp. ground allspice 1 cinnamon stick 1 tbsp. whole cloves 2 qt. lime water Scoop out red portion of the watermelon. Slice off all the dark green outer skin, leaving only the white rind. Cut the rind into cubes (1 inch) until you have 8 cups. Place rinds into lime water using a large pot. Let stand at room temperature for 5 hours. Drain and rinse in cold water. Allow rinds to soak in cold water for 30 minutes. Continue the drain, rinse and soak process for 2 additional times. Cover rinds in cold water and boil. When water reaches a boiling point, reduce flame and allow to simmer until tender. Remove and drain. Mix all other ingredients together in a pot and bring to a boil. Reduce the heat and simmer. Add the rinds and increase the heat to allow to boil. Add water to cover rinds, if needed. Simmer for 15 minutes. Sterilize jars and seals. Pack jars with rinds. Pour in liquid. Seal tightly and store in a dark cool area. |
