WATERMELON PICKLE 
9 lb. melon rind, diced
1 vial of Lilly's lime
1 gallon water

Soak overnight. Rinse and boil, covered with water for 5 hours. Add 9 pounds sugar and cook 5 hours longer. About 1 1/2 hours before the time is up add 1 cup of mixed pickling spices, 1 package of stick cinnamon in bag. Twenty minutes before taking from fire, add 1 quart vinegar. Keep well covered with water while cooking. Seal.

Ball sells pickling lime in some stores (try Walmart) or you can find Mrs. Wages Pickling Lime on amazon. Use the quantity on the package that is recommended for 1 gallon solution.
