WATERMELON RIND PICKLES 
10 lb. rind (1 melon med.)
1 sm. bottle lime
1/4 c. salt
1/2 gallon vinegar
8 lb. sugar
1 handful whole allspice
1 handful whole cloves

Peel rind and cut in small pieces. Soak 24 hours in lime and water to cover. Wash rind and boil 30 minutes in salt water. (Come to a boil and then boil 30 minutes.)

Drain and boil 30 minutes in clear water. Drain and add vinegar and sugar. Make a spice bag of allspice and cloves. Cook in syrup 2 1/2 hours. Seal in hot jars.
