GRANNY KECK'S WATERMELON RIND
PICKLES
 
9 lb. prepared watermelon rind
9 lb. sugar
1/2 lg. box mixed pickling spice
2 sticks cinnamon
1/2 sm. box allspice
1/2 sm. box cloves
1 qt. vinegar

Soak rind in lime water overnight. (Lime may be obtained at drug store.) Pour off this water and soak in clear water for 3 hours. Pour off and cover with clear water. Simmer for 8 hours, pour in sugar and simmer 3 more hours. Tie spices loosely in clean cloth and drop into pickles for 40 minutes or longer. Add the vinegar and simmer 20 minutes. Put into prepared jars and seal.
