WILD RICE CHICKEN SALAD 
1/2 c. wild rice
1 (10 oz.) pkg. frozen peas
1 tbsp. vinegar
3/4 tsp. curry powder
2 tbsp. olive oil
1/2 c. fresh mushrooms, chopped or sliced
1 c. celery, chopped
1/2 c. mayonnaise
2 c. slivered almonds, toasted
2 c. chicken, cut up
1 sm. onion, chopped fine
Salt
Pepper

Wash, cook and cool rice. Blanch peas. Mix the next 3 ingredients; add to rice and peas, and refrigerate overnight. Add the other ingredients before serving and chill until serving time. Makes a nice sized salad.
