CHICKEN CONTINENTAL 
1 lb. boneless chicken
1 tbsp. flour
1 tbsp. salad oil
1 can (4 oz.) sliced mushrooms
1 (16 oz.) can tomatoes, chopped
1/3 c. soy sauce
1 clove garlic, minced

Cut up chicken into bite size pieces. Coat with flour and brown slowly in hot oil. Drain mushrooms (keeping liquid). Combine mushroom liquid with tomatoes, soy sauce and garlic. Add to chicken with onion and stir. Cover and simmer 45 minutes until chicken is tender. Stir in mushrooms. Serve over rice.
