CHICKEN BOLOGNESE | |
3 tbsp. butter 4 skinless, boneless chicken breast halves Dried oregano Black pepper 4 thin slices Prosciutto 4 slices Mozzarella cheese 1/4 c. Chablis Pound chicken breast halves to 1/4 inch thickness. In a large frying pan, melt butter over medium heat. Add chicken breasts and cook 3-5 minutes on each side. Season with oregano and black pepper. Place a slice of Prosciutto and a slice of Mozzarella on each breast. Pour Chablis over breasts. Cover and cook 5 minutes until cheese is melted and chicken is done. Serves 4. |
