CHICKEN AND WILD RICE SALAD | |
2 whole chicken breasts 4 oz. box wild rice 1 lb. cashew pieces 1 med. onion, chopped 1 lb. white seedless grapes 16 oz. sour cream Miracle Whip Vinegar Milk Sugar Garlic powder Old Bay seasoning Soy sauce Sesame oil (optional) Boil chicken breasts until done. Remove from bones and cut into small pieces. Boil wild rice until done and drain. In a large mixing bowl, combine chicken, rice, cashews, onion, grapes cut in half. (Use as many cashews and grape halves as you want.) For the sauce you can use any kind you want. I mix sour cream, Miracle Whip, vinegar, with a little milk and sugar all to taste. Add garlic powder, Old Bay seasoning and soy sauce to taste. Mix all together very well and serve chilled. Sometimes I sprinkle sesame oil on my own serving for a little extra taste. |
