QUICHE 
1 uncooked pie shell
1 1/2 c. shredded Swiss cheese
1 1/2 c. shredded Guyere cheese
3 eggs, beaten
1 c. Half and Half

OPTIONAL:

1/2 pkg. frozen chopped spinach, defrosted and squeezed dry
4 strips bacon, cooked and crumbled

Mix cheeses and place in an 8 inch pie crust. Combine rest of ingredients and pour over cheese in pie crust. Bake approximately 45 minutes at 375 degrees or until center is firm and top is golden brown.
