BANANA NUT BREAD | |
3/4 c. softened butter 1 1/2 c. sugar 1 1/2 c. mashed ripe banana 2 eggs 1 tsp vanilla 2 c. flour 1 heaping tsp. baking soda 3/4 tsp. salt 1/2 c. buttermilk 3/4 c. chopped nuts Preheat oven to 325 degrees. Using electric mixer; cream butter and sugar together. Blend in bananas, eggs, and vanilla. Sift together flour, baking soda, and salt. Add flour mixture to banana mixture alternately with buttermilk, mixing thoroughly after each addition. Stir in nuts. Pour into greased and floured 9 x 5 x 3 inch loaf pan. Bake for 1 1/4 to 1 1/2 hours. If top becomes brown before bread is done, lower heat to 300 degrees and bake until done. Makes one loaf. |
