CHALUPA (Meat Salad) 
3 lb. pork roast (defat)
1 lb. pinto beans (add 1/2 lb. more for 12 people)
2 pods garlic sliced
2 tbsp. chili powder
1 tsp. oregano
1 can (4 oz.) chopped green chili
2 tbsp. salt

Cover with water all ingredients and cook 6 hours. Take out pork, remove bones and break into pieces. Return to pot and cook uncovered another until thickened.

Arrange bowls of: Shredded lettuce Chopped tomatoes Shredded cheese (Monterey Jack/Cheddar) Chopped onions and green peppers Hot taco sauce

TIPS: Put down chips first, then lettuce, then meat, then tomatoes, onion, green peppers and cheese. Then top with sauce.
