PINEAPPLE UPSIDE DOWN CAKE 
1 c. sifted flour
1/2 tsp. baking soda
1/4 tsp. salt
2/3 c. sugar
1/4 c. shortening
1 egg
1/2 tsp. vanilla
6 tbsp. milk
3 tbsp. butter
1/2 c. white sugar
7-8 slices of pineapple

Sift together flour, sugar, soda and salt. Add shortening and cream well. Beat egg and add milk. Beat vigorously for 1 minute.

Melt butter in an oblong cake pan. Add 1/2 cup sugar and 3 tablespoons butter and stir over low heat until well blended. Lay pineapple slices over butter mixture.

Pour batter over pineapple. Bake at 350 degrees for 45 minutes or until well done. Loosen cake from side of pan. Turn out on serving dish pineapple side up. Serve with or without cream.
