CHICKEN WITH MUSTARD 
1 chicken
1 stick sweet butter, melted
1 tbsp. vegetable oil
3 onions, minced
2 tbsp. dijon mustard
3/4 c. bread crumbs
Salt
Pepper

1. Cut chicken into 4 pieces. Sprinkle both side with salt and pepper, brush with melted butter.

2. Cook chicken, skin side up, under broiler for 15 minutes, basting with more butter.

3. Meanwhile, cook onions in butter and oil until soft. Place them in a bowl and mix with mustard.

4. Preheat oven to 350 degrees.

5. Spread onion and mustard mixture on chicken, then sprinkle bread crumbs all over it, pressing with your hands so it adheres.

6. Bake for about 35 minutes or until chicken is completely cooked. Serves 4.
