2 c. diced ham, chicken, or salmon
2 c. sharp cheddar cheese
4 med. cooked diced potatoes
1 (4 oz.) can pimentos or mushrooms
1 med. onion, chopped
4 hard cooked eggs
1 c. rolled bread crumbs
1/4 c. melted butter
1 1/2 c. white sauce

WHITE SAUCE:

1 1/2 c. milk
2 tbsp. flour
3 tbsp. butter
1 tsp. salt

Dice first 4 ingredients. Mix and pour into 3-quart casserole. Top with sliced eggs and buttered crumbs. Bake 40 minutes at 350 degrees. (I like to dice half the eggs and mix them in, then slice the rest.)
