COCONUT BISCUITS 
2 c. all-purpose flour
3/4 c. coconut, toasted
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/3 c. shortening
1 c. milk
1/2 tsp. vanilla

In mixing bowl stir together the flour, coconut, sugar, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Combine milk and vanilla. Make a well in the center of the dry ingredients; add milk mixture all at once. Stir just until dough clings together.

Use knife or narrow spatula to push dough from a tablespoon onto a greased baking sheet. Bake in 450 degree oven for 10 to 12 minutes or until golden. Serve immediately. Makes 12 to 15 biscuits.
