FRESH APPLE CAKE 
3/4 c. cooking oil
2 c. sugar
3 eggs
1 tsp. vanilla
2 c. self-rising flour
3 c. apples (cut fine)
1 c. chopped nuts
1 tsp. cinnamon
1/2 tsp. nutmeg

Combine oil, sugar, eggs, and vanilla in mixing bowl and mix well. Add flour, apples, nuts, cinnamon, and nutmeg. Mix and pour into a greased and floured 9x13 pan. Bake at 350 degrees for 1/2 hour, then 325 degrees for 1/2 hour.

BROWN SUGAR TOPPING FOR FRESH APPLE CAKE:

1 c. brown sugar
1 stick butter
1/4 c. milk

Boil for 3 to 4 minutes. Cool and pour over cake in pan.

CREAM CHEESE TOPPING FOR FRESH APPLE CAKE:

8 oz. cream cheese, softened
1 lb. powdered sugar
Dash of salt
1/2 c. butter
1 1/2 tsp. vanilla
1 c. chopped pecans

Cream butter, sugar, and cream cheese; add vanilla and salt. Beat until creamy and fluffy. (If needed, add enough milk to give it spreading consistency.) Add pecans and blend. Spread over cooled cake in pan.
