CHINA TOWN SHRIMP ALA MARILYN
SHARRATT
 
1/2 lb. shrimp
3 slices bacon
2 tbsp. fennel seed

SAUCE:

3 tbsp. ketchup
1 tbsp. soy sauce
1 tbsp. oil
1 tbsp. honey
2 tbsp. white vinegar
1 tbsp. brown sugar
1/4 tsp. minced garlic
1/4 tsp. powdered ginger
6 scallions sliced
2 tbsp. apricot preserved

Steam shrimp 5 minutes. Saute bacon, cut in small pieces. Place shrimp in single layer and pour sauce over. Sprinkle with fennel. Top with bacon bits. Place under broiler for 5 minutes. Spread crisp lettuce (1 cup cut in 1/4 inch strips) on platter and pour shrimp over. To make the sauce simple combine and blend all ingredients. Horseradish may be added for zing.
