TRI TIP ALA BOB 
1 1/2 c. white wine
1/2 c. vinegar
1 c. soy sauce
4 tbsp. sugar

Score roast 1/4 inch deep on both sides approximately 1 inch apart. Let it set at room temperature 1/2-1 hour before seasoning. Rub garlic (to taste) on both sides. Sprinkle with salt, squeeze fresh lemon juice on both sides. Pepper heavily. Pour 1/2 of marinade over meat. Let set for 15-30 minutes. Sear meat on both sides. Remove and cover with foil and remaining marinade. Cook for 20 minutes or more (time depends on BBQ, 20 minutes on a Weber). Slice and eat.

It says to "sear". That would be either on a griddle or fry pan or sear in a very hot oven.

Then it says remove and cover with foil. Then it says to finish cooking on a "BBQ".

This is our absolute favorite marinade for steaks (although I agree that it is somewhat confusing). When using a really sweet white wine, we cut back on the sugar. Other than that, the only alteration we make is that we don't have a BBQ, so we just turn the heat down and cover. Even cheap steaks always come out delicious.

I had most of the ingredients but not the white wine - but I did have some Chianti that was only good for cooking, so I used that. I Also used apple cider vinegar and since this sounded a bit like Teriyaki, I cut up some sushi ginger very fine and added that with some onion powder. The marinade was so good, I decided to make what was left into a gravy by cooking it and adding 1 Tbsp of corn starch. A little gravy on meat and potatoes is always good!
