SESAME CHICKEN 
8 oz. chicken breast
Sesame seeds, enough to coat
1 chicken breast (2 oz.)
2 oz. bread crumbs
1/2 oz. diced onion
1/2 oz. diced celery
2 oz. melted butter
1 oz. white rice
1 oz. wild rice
8 raisins
4 oz. chicken stock
1 oz. oil
Orange Sauce

ORANGE SAUCE:

4 oz. orange marmalade
2 oz. fresh orange juice
2 oz. chicken stock
1 oz. sugar
1 oz. Grand Marnier
1 oz. sherry wine

Combine all ingredients and cook for approximately 10 minutes.

1. In melted butter, saute diced onion and celery.

2. Add white rice, wild rice, raisins and chicken stock and simmer until rice is cooked.

3. When mixture is cooled, fill chicken breast with filling and pass through seasoned flour, egg wash, sesame seed and bread crumb mixture.

4. Saute chicken breast in oil on both sides approximately 5 minutes.

5. Finish cooking in 350 degree oven for approximately 30 minutes or until done.

6. Serve with Orange Sauce.
