ZUCCHINI SPAGHETTI 
1 lb. ground beef
1 sm. onion, chopped
1/2 c. chopped green pepper
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1/2 c. water
1 tbsp. minced fresh oregano or 1 tsp. dried whole oregano
1/2 tsp. dried Italian seasoning
Salt and pepper to taste
Hot cooked spaghetti
Grated Parmesan cheese (optional)

Cook ground beef, onion, green pepper, and garlic in a large skillet until meat is browned. Add zucchini and cook, stirring constantly, 2 minutes; drain well. Add tomato sauce, water, oregano and Italian seasoning; stir in salt and pepper to taste. Reduce heat and simmer, stirring often, 5 to 10 minutes or until desired thickness. Serve sauce over spaghetti; sprinkle with cheese, if desired. Yield: 4 servings.
