BROCCOLI CASSEROLE 
1 onion, chopped
1 clove garlic, minced
1 can cream of chicken soup
1/2 cup milk
1/2 lb. Velveeta cheese
1 pkg. frozen broccoli
2 c. cooked rice or 1 c. Minute Rice

Fry onion and garlic in small amount of oil. Add soup, milk, cheese and broccoli; cook over low heat until cheese melts. Add rice, salt and pepper to taste. Pour into casserole dish and bake at 350 degrees for 20 minutes.
