LINGUINI WITH PROSCIUTTO AND
OLIVES
 
8 oz. dry linguini
1/4 c. olive oil
1/2 to 2/3 c. grated Parmesan cheese
2 oz. thinly sliced prosciutto, cut into 1/4 inch wide strips
1/2 c. thinly sliced green onions, including tops
1 jar (3 oz.) pimento stuffed olives, drained
1 c. cherry tomatoes, cut into halves

Cook linguini according to directions. While linguini is cooking, heat oil in a medium size frying pan over medium high heat; add prosciutto and cook, stirring often, until lightly browned (3 to 4 minutes). Add onions and stir just until they begin to soften. Add olives and tomatoes; shake pan often until olives are hot (about two minutes). Pour prosciutto mixture over linguine; mix lightly, using two forks. Serve with cheese to add to taste. Prosciutto is premium priced yet you need only 2 ounces to serve four. Preparation time: about 15 minutes. Cooking time: 8 to 10 minutes.
