BAKED RED FISH 
2 kitchen spoons shortening
3 onions, diced
3 whole stalks celery, without leaves
2 green peppers
3 pods garlic, minced
1/2 bunch shallots
1/2 bunch parsley
1 can tomato paste
1 can tomato sauce
1 can (lg.) whole tomatoes
1 lemon, sliced
2 bay leaves
2 sprigs thyme
1/2 tsp. Tabasco sauce
Oil, flour, salt & pepper
1 very large RED FISH

Score red fish; bathe in oil and flour. Place lemon slices between scores. Bake in 325 degree oven.

While fish is baking, prepare sauce. Saute in shortening all vegetables, all tomato ingredients, seasonings, and allow to simmer 30 minutes. Pour over fish, basting fish frequently. Allow to bake until sauce is thickened and fish flakes easily from bone. Serve with rice or potatoes. Serves 6.
