POLLO ALFREDA 
1 c. Mozzarella cheese, grated
Grated Parmesan cheese
1 pkg. boneless chicken breast
1 box broccoli
1 can peas
1 jar mushrooms
1 egg, beaten
Bread crumbs

Cut chicken into chunks. Dip chicken in beaten egg; bread and fry. Cook broccoli.

In large casserole, layer mushrooms, then peas, then broccoli chopped up, then diced chicken. Cover with Mozzarella and grated Parmesan.

Bake at 350 degrees for 20 minutes. Can be made ahead and baked just prior to serving.

OPTIONAL: A white sauce can be made and poured over top prior to baking.
