CALDO GALLEGO 
1/2 c. dried white beans
1/4 lb. salt pork
8 c. water
1/2 sm. head cabbage, sliced
Salt and pepper to taste
1 ham bone with some meat
1/2 lb. beef, sliced in lg. pieces
2 med. potatoes, peeled and chopped
3 turnips, quartered and tops, chopped

Soak the beans in water for 3 hours before cooking. Then put the drained beans, ham, salt pork and beef in a pot with 8 cups of cold water. Bring to a boil; reduce heat and simmer covered for 2 1/2 hours.

Add the potatoes, cabbage, the turnips cut in fourths, the turnip greens, cleaned and chopped, and salt and pepper to taste. Simmer for 1 hour and serve hot.

NOTE: This broth is better if it is prepared the day before it is to be served and reheated.

Serves 6-8.
