APPLE COFFEE CAKE 
1 c. self-rising flour
1 egg
1 c. sugar
1/4 vegetable oil
1 tsp. vanilla
2 c. chopped apples
1/2 c. chopped nuts
1 tsp. cinnamon

Combine egg, sugar and oil. Mix until light yellow. Sift together flour and cinnamon. Stir into egg mixture. This will be very stiff. Add vanilla, stirring until well mixed. Add apples and nuts, mix well. Pour into greased and floured 9 inch pan. Bake in 350 degree pre-heated oven 45-50 minutes.
