MARY ELLEN'S MINT CHOCOLATE
DESSERT
 
1 stick butter
3 c. powdered sugar
1 tsp. vanilla
3 squares unsweetened chocolate
4 unbeaten egg yolks
2/3 to 1 c. pecans
4 egg whites, beaten stiffly
1 box vanilla wafers
1/2 gallon Bordons mint chocolate chip ice cream

Mix butter and chocolate together. Add powdered sugar, vanilla, egg yolks and pecans to chocolate mixture. Fold egg whites into mixture and let stand until partially thick. Crush vanilla wafers to cover bottom of 2 (9 inch) square pans or 1 (9 x 13 inch) pan. Cover wafers with ice cream. Pour chocolate mixture on top. Sprinkle with vanilla wafers. Put in freezer.
