STUFFED ZUCCHINI 
4 strips bacon
1 sm. onion, chopped
1/2 green pepper, chopped
1 1/2 c. cracker crumbs
2 eggs
Salt & pepper
Butter
4 zucchini

Fry bacon, drain and crumble. Saute onion and green pepper in bacon drippings until tender. Beat eggs. Mix all ingredients together. Boil squash until tender. Cut in half. Scoop center out of can. Mix this with cracker mixture. Fill squash with mixture. Brush with butter. Bake 20 to 30 minutes at 350 degrees.
