PLAIN MUFFINS 
Preheat oven to hot 400 degrees.

Grease bottom only of 12 muffin pan. In large bowl combine 2 cups all purpose flour, 1/4 cup sugar, 3 teaspoon baking powder, 1 teaspoon salt.

In medium bowl combine 1 egg, 1 cup milk, 1/4 cup oil. Beat slightly with fork. Add liquids all at once.

Using a fork, stir briskly just until moistened. Batter should look lumpy, do not over stir. Bake 20 to 25 minutes.

BACON AND ONION MUFFINS:

Substitute 2/3 cup dairy sour cream plus 1/3 cup milk for the 1 cup milk. Stir in 6 slices crisp bacon crumbled and 3 tablespoons chopped onions. Fill as above; sprinkle with sesame seeds.
