CHRISTMAS MERINGUES 
4 egg whites
2 tsp. cornstarch
2 tsp. vinegar
1 1/3 c. sugar
3/4 tsp. peppermint flavoring
4 drops food coloring (green)
3/4 c. chocolate chips
Non-pariels

Beat egg whites, cornstarch, and vinegar till frothy. Gradually beat in sugar. Beat until stiff glossy. Add flavoring and coloring. Fold in chocolate chips. Heat oven to 450 degrees and turn off. Drop by small spoonfuls on 2 foil covered cookie sheets. You can put them close together, but not to touch when they expand a little during baking. Sprinkle with non pariels. Put into preheated and turned off oven. Leave in overnight without opening the oven door! Next morning, carefully remove and store in lightly covered container; separate layers with waxed paper. Yield 8 dozen fragile cookies.
