BROCCOLI PIE 
6 c. broccoli florets, thawed and chopped
1/2 c. finely chopped onion
1 lb. Ricotta cheese
1 c. (4 oz.) shredded sharp Cheddar cheese
3 eggs, slightly beaten
1/2 tsp. dried basil leaves, crushed
1/2 tsp. salt
1/4 tsp. ground black pepper

Preheat oven to 350°F. In a large bowl, combine all ingredients, mixing well until blended. Spoon into a 10-inch quiche dish or deep-dish pie plate.

Bake 60 to 65 minutes or until knife inserted near center comes out clean.

Makes 8 servings.

Variation: Spoon mixture into a 10 x 6-inch baking dish.

Bake as directed.
